Kitchen Porter

Scope of Work:

To provide Ballygarry Estate Hotel & Spa with high standards of service to all customers in an attentive manner in accordance with current legislation.


Main Duties:

  • To ensure 4* standards of service at all times
  • To perform in a professional and courteous manner
  • To comply with statutory and legal requirements for Health & Safety for yourself, all employees and guests on the premises.
  • To ensure all hygiene regulations and HACCP are adhered to at all times.
  • To ensure the highest level of customer care at all times
  • Attend and participate in hotel meetings and training when required by the General Manager.
  • To report any maintenance problems
  • To report to duty on time, in the correct uniform.
  • To ensure a high standard of personal hygiene and grooming.
  • You must understand the importance of hygiene and high kitchen standards.
  • Be capable of moving heavy equipment safely without the risk of injury.
  • Will clean the kitchen and food prep; areas.
  • To clean outside dustbin areas and to dispose of the rubbish in line with house requirements.
  • To clean all kitchen equipment.
  • Be conscientious, happy to work until the job is done necessary.


  • Turn on Machine
  • Start wash up – washing delph closer to the machine
  • In relation to breakfast plates (large ones) please wash these with a sponge prior to putting them into the machine.
  • Keep front section clear at all times for service staff to drop off dirty delph.


During the day:

  • Make sure that wash up area is kept clean and tidy at all times.
  • The cutlery has to be wiped dry after coming out of the machine.
  • Teapots– both stainless steel & white teapots need to be cleaned once every 2 weeks.


End of night:

  • Ensure that all the crockery, cutlery etc is put away properly.
  • The chef’s small kitchen needs to be brushed and moped nightly.
  • The floor in the wash up area needs to be brushed and moped.
  • Canteen – tables need to be wiped down, floor needs to be brushed nightly & moped at weekends.
  • Small pastry area (beside ice machine) needs to be clean & washed nightly.


You must be totally flexible in your position and any other duties deemed necessary by the manager.
